This dinner exists to showcase the Bluegrass collection, and it does it in a way you cannot get at the cellar door. Each course pairs a 2023 current release with its cellar-aged counterpart from 2016, so you taste what the wine is now and what it becomes with time. The winemakers are there to tell you why.
You will arrive at La Boucherie to a glass of sparkling, then settle in for four courses of French dining. The kitchen has designed each dish to work with both the young and the aged wine in its bracket, so you are not just tasting wine, you are tasting how food changes each one.
