At Saddler’s Creek Wines, we call these wines our Hunter Valley Unsung Heroes. They are emerging and alternative varieties that thrive in our climate, require less intervention in the vineyard, and deliver expressive, food-friendly wines that feel right at home in the Hunter.
This is not about replacing the classics.
It is about showing how the Hunter Valley continues to evolve.
What makes a wine an Unsung Hero in the Hunter Valley
An Unsung Hero is not chosen for novelty. It earns its place in the vineyard.
These varieties share a few important qualities:
- They grow confidently in Hunter Valley conditions
- They cope well with warmth and humidity
- They need less intervention to reach balance
- They deliver clarity of fruit and varietal character
- They suit modern food and the way people like to drink wine today
This is why we are also planting for the future, including grafting Negroamaro over underperforming Merlot. The same vineyard land, matched with varieties better suited to our region.

The Hunter Valley Unsung Heroes at Saddler’s Creek
Single Suitcase Fiano
Fiano has proven itself as one of the most natural fits for the Hunter Valley.
It holds freshness, develops texture, and delivers flavour without heaviness. It is vibrant, savoury and effortless to drink.
In the glass you will find citrus, pear and subtle floral notes with a clean, balanced finish. It shines with seafood, salty cheeses and long lunches shared around the table.
Winemaker’s Craft Gewürztraminer
When handled with care, Gewürztraminer is powerful, dry and incredibly food-friendly.
In the Hunter Valley it ripens evenly and expresses its aromatics naturally, without needing excess sweetness or manipulation.
Expect rose petal, gentle spice and a textural palate that works beautifully with bold flavours, spice and richly seasoned dishes.
Saddler’s Wild White
Wild White is shaped by the season rather than a fixed formula.
Each vintage is a thoughtful blend of varieties that perform best in the vineyard, often including Gewürztraminer, Semillon, Verdelho and Chardonnay.
The result is a wine that is fresh, textured and honest. It is designed for relaxed drinking and shared food, and it changes slightly each year because the vineyard does too.
Saddler’s Rosé
Our Rosé is Tempranillo-led, giving it structure and savoury depth.
Dry, balanced and versatile, it is made to sit comfortably at the table rather than as a fleeting summer style.
Red berry notes, subtle spice and a clean finish make it an easy match for charcuterie, seafood and Mediterranean flavours.
